I’ve poked around for a while, but can’t find out how to block incoming FAX numbers.
Is this even possible?
Are you trying to block a particular number from reaching your Fax DID or are you trying to prevent any fax from reaching your voice line?
On a voice line one can block a particular number using the phone book and a rule that directs that call to a busy tone (or something other than your voice phones). I do not see that feature affecting any calls to a Fax DID.
Blocking calls by category is not available. There is no “redirect all fax calls” that would prevent fax calls from being received on a voice line.
I want to block a particular FAX number that is sending unwanted garbage faxes. I can block voice numbers, but based on your response it looks like I can’t block a FAX number.

This will work.
Just put the phone (fax) number into your CallerID Filtering Rules, and send it to System Hangup, and you are good to go.
There was a crazy fax always calling us. It is in the list since then. No more fax calling. 
And couple callcenter telemarketing numbers too.
